Lemon Cupcakes

These cupcakes are simple to make and absolutely delicious to eat.


Makes 24 cupcakes

Preheat oven to 350

  • 2 cups of flour
  • 1.5 cups of sugar
  • 1 teaspoon of salt
  • .75 cups of flour
  • 1 lemon
  • 1 cup of milk
  • 1.5 teaspoons vanilla extract
  • 3 large eggs
  • 2 teaspoons of baking powder

Whisk dry ingredients in a large bowl. Add butter, milk, vanilla, and eggs. Beat until blended completely and has a smooth, creamy texture. Add one lemon zest and the juice of one half of the lemon. Beat for one minute on low. Ice cream scoop the batter into muffin liners in a medium size muffin pan. Fill liners 3/4 with batter. Bake for 23 minutes. Let cool. Top with cream cheese frosting.
